Chocolate Covered Strawberry Pound Cake



Happy Valentines day!! Since the hubby is still away I am going to spend my valentines day with my little man. We are heading back home to South Carolina this friday since the hubby will be back at the end of next week. We can't wait to see him!! After he is home the madness of moving begins. We are excited to be moving back to Miami, our hometown!! Ok, now back to the chocolate covered strawberry pound cakes. These little cakes are so yummy and great valentines day goodies.




Ingredients:

  • 3 Sticks of Butter, Room temperature
  • 2 Cups of All purpose flour
  • 1 Teaspoon of Salt
  • 1 1/2 Cups of Sugar, Plus 1 Tablespoon for Strawberries
  • 1 Teaspoon of Vanilla extract
  • 6 Eggs
  • 3/4 Cup of Frozen strawberries, thawed
  • 1 Bag of Candy melts, Red
  • Heart shaped muffin pan






Preheat oven 350 degrees. Put strawberries in a small bowl and add 1 Tablespoon of sugar. Mash the strawberries and set aside.






In a medium bowl whisk together flour and salt, set aside.





In a mixing bowl beat butter and sugar until light and fluffy.






Add eggs one at a time until well combined.






Gradually add flour mixture until the batter forms.







Add in strawberries and mix until combined.





Spoon batter into muffin tin. Place in oven for 15 to 20 minutes.






Remove from oven and place on a cooling rack until complelety cooled.





Melt the candy melts as directed on the back of the bag.








Place cooled heart shaped cakes in candy melt. Complelety coat the hearts and place them on wax paper to dry.

Strawberry Crinkle Cookies (Cake Mix)



With valentines day just a day away I thought why not make some Strawberry cookies!!! These crinkle cookies are made with cake mix so they are super easy and simple to make.




Ingredients:

  • 1 Box of Strawberry Cake mix
  • 1/3 Cup of Oil
  • 2 Eggs
  • 1/4 Cup of Powder sugar




Preheat oven 350 degrees. In a mixing bowl add cake mix, oil and eggs.





Mix until dough forms.





In a small bowl add powder sugar.






Form a ball with a small ice cream scoop.





Roll the ball of dough in the powder sugar until well coated.






Place the cookies on a cookie sheet lined with parchment paper. Place cookies in preheated oven for 9 to 10 minutes.





Remove cookies from oven and let them sit on the cookie for about 1 minute.






Place cookies on a cooling rack to cool completely.

Mini Strawberry Cheesecakes



Guess who requested cheesecake this week....... Yup my brother did!! These cheesecakes are super easy and fast to make. If you are having a small dinner party it is a great dessert that you can make early and store them in the fridge until you are ready to serve them. Everyone can have their own mini cheesecake and not feel guilty after eating it.




Ingredients:

  • One Pack of 6 Mini Ready Crust (Graham Cracker)
  • 1- 8oz Package of Cream cheese, Soften
  • 1/4 cup of Sugar
  • 1 1/2 Teaspoons of Fresh Lemon juice
  • 1/2 Teaspoon of Lemon zest
  • 1/4 Teaspoon Vanilla extract
  • 1 Egg
  • Fresh Strawberries




Preheat oven 325 degrees. In a mixing bowl add cream cheese, sugar, lemon juice, lemon zest, vanilla extract and egg.





Mix together until all ingredients are well combined.




Pour the cream cheese mixture into the mini crust. Place the cheesecakes in the oven for about 25 minutes.






While the cheesecakes are in the oven cut the strawberries into slices and add some sugar.





Remove cheesecakes from the oven and them cool completely .





Once the cheesecakes have cooled completely top them with the strawberry mixture and serve.
