Happy Veterans Day!!

Happy Veterans Day to all the veterans out there. Thank you for the sacrifice you have made to make our country safe!! Happy 236th Birthday to the Marine Corps



Today is the Marine Corps' 236th Birthday!! I wanted to wish all the Marines especially my Marine a very happy birthday!! Today is my hubby's ball so we will be celebrating tonight.




This picture is from when my hubby graduated boot camp almost 11 years ago with all of his best friends. I feel proud to be a Marine Wife Oorah!

Dulce De Leche Cupcakes



If you love Haagen Dazs Dulce de leche ice cream then this cupcake is for you! This was the first time I made buttercream and boy did I make a huge mess. It was all worth it because after I cleaned the kitchen I got to eat one of these yummy cupcakes!!





Ingredients for the cupcakes:
  • Yellow cake mix
  • 1 Stick of unsalted butter, soften
  • 1 Cup of Milk
  • 1/4 Cup of Water
  • 3 Eggs
  • 1 Teaspoon of Vanilla extract
Preheat oven 350 degrees. Add Butter to the mixing bowl and mix until it is light and fluffy. Add milk and water to the butter, mix until well combined. Add the eggs and vanilla and mix well. Pour in the cake mix to the butter mixture. Mix for about 3 minutes.




Line muffin tin with cupcake liners. Pour batter into cupcake liners about 3/4 full. Place in oven for 15-20 minutes or until a toothpick comes out clean.




Remove cupcakes from oven and place on a cooling rack.




Ingredients for Dulce de leche buttercream:
  • 1 Can of Dulce de leche, you will need an extra can for the filling
  •  2 Egg yolks
  • 3/4 Cup of Sugar
  • 3 Tablespoons of Cornstarch
  • 1/4 Teaspoon of Salt
  • 1/4 Cup of water
  • 1 Teaspoon of Vanilla extract 
  • 2 Sticks of unsalted Butter, room temperature
  • 4 Cups of Powdered sugar



Place egg yolks in a medium mixing bowl.





In a heavy saucepan stir in the sugar, cornstarch and salt. Whisk in water first and then 1 can of Dulce de leche. Bring to a boil over medium heat. Boil for about 1 minute whisking constantly. Remove Dulce de leche mixture from the stove.





Gradually whisk the Dulce de lech mixture into the bowl with the 2 egg yolks. Stir in vanilla extract.






After you combined the egg yolks and Dulce de leche mixture strain mixture through a wire strainer. Set mixture aside until it has completely cooled.





While the Dulce de leche mixture is cooling for the buttercream, take cooled cupcakes and make a small hole in the middle of the cupcakes. Save the tops in a bowl, you will need them later.





Open the extra can of Dulce de leche. Fill in the holes of the cupcakes with the Dulce de leche.






After you add the filling to all the cupcakes place the tops back in the middle.





Now back to the buttercream. Beat the 2 sticks of butter on high speed until it is light and fluffy. Mix in the cooled Dulce de leche mixture.






When the butter and Dulce de leche mixture are well combined add in powdered sugar one cup at a time until you get to the the thickness you would like for your buttercream. Then have fun frosting your cupcakes!!








These are oh so yummy!! Enjoy!!



Look at my little man sitting in his high chair for the first time!! I think he was waiting for his cupcake but I showed up with some sweet potato. Poor little man one day he will get to eat a yummy cupcake!!

Cheddar Cheese Muffins



These cheddar cheese muffins are so yummy! They are super easy to make and are great to take to any party.




Ingredients:
  • 1 Egg
  • 3/4 Cup of Milk
  • 1 1/2 Cups of Flour
  • 1 Cup of Sugar
  • 1 Cup of Shedded cheddar cheese
  • 4 Tablespoons of melted butter
  • 1 1/2 Teaspoon of Baking Powder
  • 1/4 Teaspoon of Vanilla extract









Preheat oven 400 degrees. In a medium bowl add all of the ingredients and mix until well blended together.







Spray mini muffin pan with nonstick cooking spray. Fill muffin pan with a small ice cream scoop. Place in oven and bake them for 12-14 minutes. If you would like to make these in a large muffin pan bake them for 20-22 minutes. This makes about 24 mini muffins and 12 large muffins.








I like to eat mine with a litte bit of butter!! Enjoy!!
