Pumpkin Patch!

Yesterday afternoon we attended a fall festival that my hubby's job was having! It was the first time that we as a family were going to get pumpkins to carve. I felt like a little girl all over again. But hey I haven't carved a pumpkin since I was about 10 years old. I also used the time to take a bunch of pictures of my little man's first time to a pumpkin patch!

Honey garlic glazed Pork chops


These Pork chops are delicious! You really have to try them. I found the recipe here. We had them the other night and they are definitely going in my recipe book! 



Ingredients:
  • 4 Bone in Pork chops
  • 1/4 Cup of Honey
  • 1/4 Cup Lemon juice
  • 2 Tablespoons of Soy sauce
  • 1 Garlic clove minced


Season the Pork chops with salt and pepper to your liking.



Put seasoned Pork chops in a large skillet coated with cooking spray.



Brown Pork chops on both sides. Cook over medium heat until the juices run clear.



Remove Pork chops from skillet and put them in a 200 degree oven to keep them warm while you make the sauce.



In a bowl add the honey, lemon juice, soy sauce and garlic. Mix until it is all combined and runs smooth. 
***TIP*** Spray measuring cup with cooking spray before you pour the honey and the honey will not stick to the measuring cup!




Pour mixture into the same skillet that the Pork chop were in. Cook over medium heat for about 4 minutes stirring occasionally.




Pour sauce over the Pork chops and Enjoy!!!!

By the way, today we are going take JJ to the Pumpkin patch so he can get his very first pumpkin!! I think I am more excited than he is! I will post pictures soon!!

Mashed Cauliflower


I got this recipe from the Whole Foods Market website, you can find it here. I am not personally a fan of cauliflower but after I tried this recipe it is not so bad. This is also a great way to get kids to eat their veggies because it looks like mashed potatoes. It is also a great way to eat less carbs and feel full. The hubby also enjoyed this recipe and he loves him some potatoes.



Ingredients
  • 1 Medium head of Cauliflower, cut into florets
  • 2 Tablespoons of E.V.O.O
  • Salt and Pepper
  • 1/4 Cup of the cooking water



Bring a large pot of salted water to a boil and add the caulifower. Cook until the cauliflower is very tender. Reserve 1/4 cup of water and transfer the cauliflower to a bowl.



Add E.V.O.O and reserved cooking water 1 Tablespoon at a time until puree is smooth. Mash with a potato masher. 



Season with salt and pepper to your liking.

Grilled Red Chili Steak Recipe

Last night for dinner we had steak and it was oh so good! I found the recipe on the taste of home website. I didn't follow the recipe to the tee because I didn't have any Cumin or Salsa on hand. I thought it came out pretty good and the hubby liked it. So I guess that it is a keeper. This is how I made it:


Ingredients
  • 3 Tablespoons of Chili powder
  • 2 Teaspoons of Brown sugar
  • 2 Teaspoons of Pepper
  • 2 Garlic cloves, Minced
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Dried Oregano
  • 1 Pound of Steak ( I used Skirt Steak)


Put the steak in a big zip lock bag.



Add all the ingredients to the steak.



Close the zip lock bag and rub all the ingredients into the steak.



Put the steak on the grill and cook to your desired doneness.


Let steak stand for about 10 minutes before slicing.



 Enjoy!!

In JJ news, my little man is officially crawling and sitting up on his own. I think it is time to really start baby proofing the house, don't you think?!
