Molasses Sandwich Cookies



I have never tried Molasses cookies so I decided to make some. I found this recipe on the Martha Stewart website. After I made the cookies I remembered I had a can of chocolate frosting in the fridge and at our house chocolate goes with everything. So I put some frosting on a cookie and sandwiched it with another cookies and took a big bite. All I can say is YUMMO!!!




Ingredients:

  • 2 Cups of Flour
  • 1 1/2 Teaspoon of Baking soda
  • 1 Teaspoon of Cinnamon
  • 1/2 Teaspoon of Nutmeg
  • 1/2 Teaspoon of Salt
  • 1 1/2 Cups of Sugar
  • 1 1/2 Sticks of Butter, Softened
  • 1 Large Egg
  • 1/4 Cup of Molasses
  • 1 can of Chocolate frosting





In a medium bowl whisk together flour, baking soda, cinnamon, nutmeg and salt.





In mixing bowl add Butter and 1 cup of sugar. Set aside the 1/2 cup of sugar to use later. Mix butter and sugar until well combined.






Mix in egg and the molasses until well combined.






On low speed gradually add flour mixture, just until the dough forms. At this point I covered the dough and put it the fridge over night so the dough is easier to handle.




Preheat oven 350 degrees. Place the 1/2 cup of sugar in a shallow bowl. 






Remove dough from fridge. With asmall ice cream scoop form a ball. Drop the dough in sugar and coat completely.




Place dough on a cookie sheet lined with parchment paper. Bake one cookie sheet at a time for 10-15 minutes.






Remove cookies from oven and leave them on the cookie sheet for about 1 minute then place them on a cooling rack to cool completely.







Once cookies have cooled completely spread frosting on the bottom of the cookie and sandwich it with another cookie.
