Happy Halloween!


This is JJ's first Halloween and this year he is dressed up as baby Shrek. So ofcourse I went picture crazy.

Macadamia nut cookies


When we were in Hawaii I picked up a bag of macadamia nuts to bring back with us. This bag has been sitting in my pantry and yesterday I finally got around to making cookies. At my house we have a huge sweet tooth. So after I finished baking them I put them in a ziploc bag so the hubby can take it to work with him in the morning. Ok I am not going to lie we did try a few of them. After all macadamia nut cookies are one of the our favorite cookies.




Ingredients:
  • 2 1/4 Cups of all purpose Flour
  • 1 Tsp Baking soda
  • 1 Tsp Salt
  • 2 Sticks of Butter
  • 1 Cup of white Sugar
  • 1/2 Cup of Brown Sugar
  • 2 Eggs
  • 2 Tsp Vanilla Extract
  • 1 Cup of White Chocolate chips
  • 1 1/2 Cup of  Macadamia nuts

Preheat oven 375 degrees. Combine flour, baking soda and salt in a medium bowl and set aside.



In another bowl add butter, white sugar and brown sugar. Beat until well combined.





Add eggs and vanilla extract.





Mix until well blended.





Add in flour mixture.




Mix until a dough forms.





Add in white chocolate chips and macadamia nuts.





Mix until dough is well blended.





With a small ice cream scoop, scoop dough on to a cooking sheet lined with parchment paper.





Place cookies in oven for about 10- 11 minutes.





Remove from oven and place on a cooking rack.





These look and taste super yummy! Enjoy!

I never knew until I was a momma...


I never knew I would find a love inside of me that I never thought existed.

I never knew that I would forget about myself and only worry about him.

I never knew I would spend my day making sure he has everything he needs.

I never knew that I would never sleep well again.

I never knew that his little smile would brighten up my day.

I never knew how proud I would feel to be his momma.

And I never knew how much my mom loves me until I became his momma.

Broccoli Fritters

This picture does not do it justice!

I really love broccoli. So when I find a new recipe with broccoli I always have to give it a try. This recipe will have the whole family eating broccoli (yes that is how good it is!!).  I found this recipe as I looked for some quick and healthy meals on the Taste of home website. I changed it a bit. I used a bag of frozen broccoli florets because I didn't have fresh broccoli at hand.



Ingredients:

  • 1 Bag of frozen broccoli florets
  • 2 Eggs, lightly beaten
  • 2 Egg whites, ligthly beaten
  • 1/3 Cup grated Parmesan cheese
  • 2 Tablespoons of all-purpose flour
  • 1/2 Teaspoon salt
  • 1 Tablespoon of minced garlic
  • 1/2 Teaspoon pepper
  • 4 Tablespoons of vegetable oil




I roasted the broccoli instead of steaming it. It is your choice which way you would like to do it. Personally I like roasted broccoli better. Defrost the broccoli and put it in a bowl. Drizzle with some E.V.O.O. and season with salt and pepper.





Mix in E.V.O.O., salt and pepper making sure you coat the broccoli.




Preheat oven to 400 degrees. Place broccoli on a greased baking sheet. Cook for 25 minutes.




Remove broccoli from oven and let it cool.




Coarsely chop broccoli and set aside.




In a bowl add 2 whole eggs and 2 egg whites.




Lightly beat eggs.




Mix in cheese, flour, salt, garlic and pepper.









Stir in broccoli.






Heat 2 tablespoons of oil in a large nonstick skillet over medium heat.




Drop batter in pan and press them down lightly to flatten.




Cook for 2 to 3 minutes on each side until golden brown. Drain on paper towels.

Carving Pumpkins

We had a fun time carving our pumpkins the other day! The hubby actually enjoyed it and he did a great job on his pumpkin! I carved two pumpkins, JJ's and mine.  JJ's pumpkin came out super cute and mine on the other hand came out OK. I carved a mummy and it really doesn't look like one. So this year the hubby won our first annual Frias family pumpkin carving contest. It feels so good to start our own family traditions!
